101 Simple Grilling Recipes

Another great article from The Minimalist on the NY Times.  This time:  101 Fast Recipes for Grilling.  I often find myself struggling to come up with different ideas for cooking on the grill, although I've recently started to branch out from the old standbys of burgers, sausages, and barbecue chicken.  I got my husband a couple grill gadgets for Father's Day as an added incentive.  This article has a ton of fabulous ideas, and I plan to try some of them out soon.  They are broken down into categories, such as Vegetables and Fruits, Meats, Salads, Desserts...  A few that look appealing to me:
  • Spice-rubbed carrots:  Roll peeled carrots in cumin, salt, pepper, and brown sugar.  Char, then move away from direct heat and cover the grill until the carrots are tender
  • Rub thick zucchini slices with a mixture of dill, yogurt, olive oil, and lemon.  Grill slowly
  • Call it grilled chicken parm:  pound breast thin, top one side with sliced tomato, mozzarella and parmesan.  Fold in half, seal with a toothpick or skewer, and grill for a few minutes on each side
  • All the kebabs:  shrimp and chorizo, lamb and carrots, strawberries and cherry tomatoes, sausage pepper and onions, peaches plums strawberries and watermelon...
  • Grill halved new potatoes or fingerlings (microwave or parboil first), red onions and scallions.  Chop as necessary and toss with chopped celery, parsley, mustard, and cider vinegar
  • Ratatouille:  Grill chunks of zucchini, yellow squash, mushrooms, eggplant, onion and tomatoes (or use cherry tomatoes), all until lightly browned and perfectly tender.  Toss with fresh marjoram or oregano, thyme, basil, and olive oil. 
  • Cut bananas into thick rounds (like scallops almost), char quickly and serve with caramel sauce, brown sugar, vanilla ice cream, Nutella, ... whatever
