Menu of the Week

Here's a little peek at what I've been cooking.  Can you tell I'm a big fan of Cooking Light?  

Sausage and Peppers - I left some of the peppers out to serve raw with dressing for the big boy.  He hates cooked peppers but seems to like them just fine raw.  This is an old standby recipe.

Roasted Haddock with Tomatoes and Olives, Rice - I used this recipe, but obviously used haddock instead of tilapia.  Super-fresh haddock from the farmer's market, cherry tomatoes from the neighbor, and I got to use up the last of the olives.  Nice.

Chicken Breasts Stuffed with Artichokes, Lemon, and Goat Cheese, Rice, Green Beans - I love this one.  It's been in my recipe binder for years now, and I love it every time.  Super easy but feels special and a little different.

Loaded Potato Soup - Super fast, easy, and good.  I used vegetable broth, and you could use veggie bacon or leave it out altogether to make this a vegetarian dish.
