Menu of the Week
Here's a bit of what I've been cooking lately...
Pork Tenderloin, Green Beans, Mashed Potatoes
Turkey Reuben Sandwiches, Carrot Sticks/Cherry Tomatoes
Corn and Butternut Squash Chowder - Very good vegetarian recipe, and a great choice for a Fall menu.
Spinach Lasagna - I like this recipe. It uses a blend of cottage cheese, sour cream, and cream cheese instead of the usual ricotta for the filling. It may sound a little strange, but it makes the lasagna a little lighter, and it brings out the other flavors a bit better, in my opinion. Unfortunately, my 3-year-old is not yet a fan. Thankfully, though, my 1-year-old loves it. He seriously ate more than I did! That kid is nonstop.
