As always, I love finding easy weeknight recipes. Here's what I'm trying this week:
Curried Chicken Legs with Carrots and Rice
(Except I added potatoes to the chicken and carrots to make it a one-dish meal)
Panko Breaded Fish Sticks
Creamy Goat Cheese Pasta with Roasted Asparagus
(I've made this one before, and it's super easy and very tasty!)
And then thank goodness for leftovers to fill in on busy nights!
