For this week's cooking club entry, I decided to make something that is more targeted for adults but that can be adjusted as necessary for the kids. I made this Spicy Sweet Pork Tenderloin, and while the salsa mixture may not be a hit with kids, all you have to do is leave it off their plates, perhaps replacing it with a little mixed berry or apple preserves if you like. I've found that although the big boy won't eat regular pork chops because the texture is too tough for him, he really likes tenderloin. I served it with roasted potatoes and green beans. It is extremely quick and easy to make, perfect for those busy weeknights. This will definitely get a repeat performance in our house!
